I came across this recipe while in high school on the box of Pillsbury Funfetti Cake Mix and haven’t seen it on a box since! Luckily, I cut it off and have kept it all these years – but I won’t tell you how many years it’s been 😉 I wanted to post this so I can always find (it in case I ever do loose my little side-of-the-box cutout) AND to share it with you so your loved ones can enjoy the sweet goodness of cookies and icing!
It is SO simple and typically you only need to by 2 ingredients at the store – cake mix and icing. The other 2 are most likely already in your kitchen. Funfetti Cookies are Always a hit at parties or gatherings and I NEVER have any leftovers (which is good for my waist, but sad for my tummy).
This recipe makes 2-3 dozen depending on the size you make your cookies.
1 box of Pillsbury Funfetti Cake Mix
1/3 cup oil
1 can Pillsbury Funfetti Vanilla Frosting
Step 1: Heat oven to 375°F. In large bowl, combine cake mix, oil and eggs; stir with spoon until thoroughly moistened. Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets (USE PARCHMENT PAPER – It’s amazing). With bottom of glass dipped in flour (I never dip my glass in flour- saves time and a mess), flatten to 1/4-inch thickness.
Step 2: Bake at 375°F. for 6 to 8 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets.
Step 3: Spread frosting over warm cookies (I usually do about 5 at a time so the sprinkles stick better). Immediately sprinkle each with candy bits from frosting. Let frosting set before storing. Store in tightly covered container.
